Raspberry Lamingtons
Most lamingtons in the grocery stores and bakeries are chocolate. I love these raspberry ones. A friend gave me the recipe. They're not difficult to make, just a bit time consuming. And messy! But the end result is worth it. They're so pretty and tasty, especially for any spring occasion!
1 white cake, baked in a 9x13 pan
Raspberry Jello
Desiccated coconut*
Put cake in freezer for an hour or 2. This will make it much easier to work with. Cut the cake in cubes or small rectangles. Mix the jello as per the instructions on the packet. Jello is ready once it starts to set, about the consistency of a loose jam. Put the jello in a shallow bowl or baking dish. Using either a fork or your hands, coat the cake cubes in jello and then roll in coconut.
*Desiccated coconut is coconut meat which has been shredded or flaked and then dried to remove as much moisture as possible. I find this at my local Italian deli. Regular flaked coconut would be fine to use.
