I went shopping!
I've been MIA for a while and haven't been doing much jewelry making for the past couple months. My mom has had a rough 2011 so far. First up was radiation treatment for breast cancer and most recently she was in the hospital with pneumonia. She is home, doing well and taking it easy while she recovers.
A gem show was in town last weekend and my mom was so looking forward to going with me. She always goes with me and loves to look at strand after strand of gemstones and pearls. The day was always capped off with a nice lunch. This year I went alone but still brought my new beads to show her. I can't wait to start creating again!

Raspberry Lamingtons
Most lamingtons in the grocery stores and bakeries are chocolate. I love these raspberry ones. A friend gave me the recipe. They're not difficult to make, just a bit time consuming. And messy! But the end result is worth it. They're so pretty and tasty, especially for any spring occasion!
1 white cake, baked in a 9x13 pan
Raspberry Jello
Desiccated coconut*
Put cake in freezer for an hour or 2. This will make it much easier to work with. Cut the cake in cubes or small rectangles. Mix the jello as per the instructions on the packet. Jello is ready once it starts to set, about the consistency of a loose jam. Put the jello in a shallow bowl or baking dish. Using either a fork or your hands, coat the cake cubes in jello and then roll in coconut.
*Desiccated coconut is coconut meat which has been shredded or flaked and then dried to remove as much moisture as possible. I find this at my local Italian deli. Regular flaked coconut would be fine to use.

Deviled Eggs
These deviled eggs have a bit of zip in them from the horseradish. They'll be a great addition to your Easter dinner!
6 hard-cooked eggs
1/4 cup mayonnaise
1 tablespoon prepared horseradish
1/2 teaspoon dill weed
1/4 teaspoon ground mustard
1/8 teaspoon salt
Dash pepper
1 dash paprika
Cut eggs in half lengthwise. Remove yolks; set whites aside. In a bowl, mash the yolks. add mayonnaise, horseradish, dill, mustard, salt and pepper; mix well. Pipe or spoon into egg whites. Sprinkle with paprika. Refrigerate until serving.

The Blues
I've been finishing up items, getting ready for a show in a couple weeks. Last night I played with my blue gems... with all of this snow, I've been thinking about sun, blue skies and bright blue water!
